72-Hour Fermented Dough

At PizzaMahn, we believe that great pizza starts with great dough. Our signature 72-hour fermented dough is the foundation of every pizza we create. This traditional Italian technique allows the dough to develop complex flavors, a light and airy texture, and improved digestibility.

The fermentation process begins with a carefully crafted starter that we nurture for three full days. During this time, natural yeasts and bacteria work together to break down the starches and proteins, creating a dough that's both flavorful and easy to digest. The result is a crust that's crispy on the outside, soft and chewy on the inside, with a subtle tang that complements our fresh toppings.

Each batch is hand-stretched and fired in our wood-burning oven at temperatures exceeding 800Β°F, creating the perfect char and blistered crust that's characteristic of authentic Neapolitan-style pizza. Combined with locally sourced ingredients and Caribbean-inspired flavors, our 72-hour fermented dough creates a unique pizza experience you won't find anywhere else in St. Thomas.

Our unique fusion combines the best of both worlds: time-honored Italian techniques with fresh, local Caribbean ingredients. Every pizza is crafted with care, fired in our mobile wood oven, and served under the stars.
